Q. I know red bell peppers are high in vitamins, but what about green and yellow ones? I use one color one night, another the next in my salads. Am I shortchanging myself? -- Michele A. Keep mixing. Food is like a great autumn day: The more colors, the better the romance. Especially in peppers, each color has its virtues. A medium yellow pepper has more than double the vitamin C of a green one (180 milligrams vs. 80).
