Q. I know red bell peppers are high in vitamins, but what about green and yellow ones? I use one color one night, another the next in my salads. Am I shortchanging myself? -- Michele

A. Keep mixing. Food is like a great autumn day: The more colors, the better the romance. Especially in peppers, each color has its virtues. A medium yellow pepper has more than double the vitamin C of a green one (180 milligrams vs. 80). Red ones fall in between, carrying about 128 milligrams of C.

Red wins the beta carotene prize, containing a whopping 1,624 micrograms per medium pepper -- that's almost eight times more than green peppers and nearly 14 times more than yellow ones!

Green ones are no nutritional slouches, either. They contain about 210 micrograms of beta carotene, and they do one big thing the others won't: Save you money.
